Oh my MIGAS

I recently discovered migas and I have never been happier!! I’m sure everyone makes theirs differently, but who cares as long as you like your final product!

Ingredients

  • 1/2 cup Corn tortilla chips (I used reduced guilt-trader joes)
  • 2tsp-1tbsp Evoo
  • 1tsp Garlic
  • 1/8 cup Peppers
  • 1/8 cup Onions
  • As much as u like Jalapeño
  • 2 eggs
  • Smoked paprika
  • Ground black pepper
  • Garlic powder
  • Cayenne pepper
  • 2 tbsp Mexican blend cheese
  • Salsa
  • Guacamole
  1. Over medium heat in a medium sized non stick skillet add evoo and chips. Break chips apart with hands or with spatula
  2. Add chopped peppers, onions, garlic and jalapeño. Cook until onions start to look translucent
  3. In a cereal bowl crack 2 eggs and add smoked paprika, garlic powder, ground black pepper, cayenne paper and whisk with a fork until thruoughly combined
  4. Mix eggs in with the contents of the pan
  5. Cook for a few more minutes or until eggs are done…
  6. Plate and add 2 more chips for crunch, cheese, guac and salsa (optional)
  7. ENJOY!!
